FERMIN Iberico Acorn Fed pork shoulder (paleta) is made from the Iberico pig, a special breed native of Spain, and considered the best for producing high quality dry cured hams with unsurpassed taste and aroma.

After each carving session, it is recommended to cover the carved area with clear food wrap (use a new piece every time) in order to keep the meat moist. If the leg is exposed to sunlight, place a cloth on top of the wrap. If mold appears, use vegetable oil and a paper towel to brush the area, carve a thin layer to guarantee no mold is ingested and worry no more. Mold plays a key role during the curing process. It only appears on the surface.

What grade ham is it?

The ham is black label, the highest category.
Our 100% Iberico pigs will join their free-range happy life in our “Dehesas”. During the “Montanera” season (acorn season) and during the last 3-4 months of their lives, they will eat as many as they want until they almost double their weight. During this period, each pig can eat between 6 and 10 kilos of acorns and between 3 and 4 kilos of natural pastures. But the exact amount of acorns will vary every year depending on Mother Nature, but it can last from 4-6 months.

The exercise they do -they can walk up to 15 km every day- initially slows their fattening, but facilitates the infiltration of fat in a natural way, which provides amazing juiciness and perfect texture.

Cured at least 20 months using artisanal methods in La Alberca, Spain, a Natural Reserve declared a World Heritage.

Is this the jamón iberico de bellota?

The ham is the front leg of the pig. This is the 100% Iberico Acorn-Fed Shoulder or “paleta”, the front leg of a free range iberico pig, a native breed from Spain known as "pata negra". During the Montanera season (from October through February), this pig doubles its weight eating acorns and grass.
